My Vegan Plantain Porridge

You start off with two large unripened plantains.

First, peel and chop the plantains. Putting them in a large bowl of lemon and water is optional but it is often used to prevent browning of the plantain.

Fill the blender 3/4 way up with dairy free milk of your choice. In this case I chose vanilla almond and coconut milk (in powdered form). You can add flour or corn starch to thicken the texture but, I added shredded coconut. Blend until it reaches a smooth, even consistency.

Add two cinnamon sticks to a medium pot, let water come to a boil before adding the blended mixture.

Add the mixture to the boiling water and slow steadily for 15 minutes or so. Then add your flavoring : Vanilla, Ground nutmeg, and almond extract (optional). Then sweeten to your liking, I used coconut sugar and cane sugar.

Vegan French Toast: “Fail”

Using Chia seeds instead of eggs and almond milk , I prepared vegan French toast.

People in the comments section kept mentioning how the French Toast was soggy in the middle so I made mine extra crispy.

I topped it off with powdered sugar, agave and bananas.

This was the first reaction to my french toast recipe.

While the negative backlash received more attention than my original, post plenty of vegans reached out to me asking for the recipe. So, all in all this was not a ‘fail”
